Cuisine Romefort Carbon Steel Chef's Knife 22 cm - The favourite knife of the Chef himself
As head of Gourmet-Web.de and experienced knife sharpener, Benoît Romefort has created his first own knife. It combines the ergonomic shape of the Bistronome knife from the manufacturer Au Nain with a carbon steel blade, which ensures that the razor-sharp sharpening is maintained in the long term. The handle is made of high-quality rosewood and holds the knife together with brass rivets. Cuisine Romefort stands for quality, because only selected products are sold under this brand.
The chef's knife is versatile due to its size. The blade is 22 cm long and 6 cm wide, which makes it ideal for precise cutting as well as chopping. The knife is made of carbon steel XC75 and hardened with 58 Rockwell and therefore has a longer cutting life than steel blades, which are usually hardened with 56 Rockwell. This difference may seem insignificant, but in practice it makes a noticeable difference. Japanese knives are often hardened with 61 Rockwell and therefore even harder than the Cuisine Romefort Chef knife, but also more prone to breakage. Due to its wide blade, shape and hardening, the knife is a compromise between a French chef's knife and a Japanese Santoku knife. The knife is 35 cm long and weighs about 240 grams.
Because there is no chrome in the blade, microchipping - i.e. small breaks in the blade - is prevented. The sharpening is thus maintained for a long time and the blade remains sharp like a razor blade. An important feature of the Cuisine Romefort carbon steel chef's knife is that it is easy to sharpen.
Over time, carbon knives develop a patina on the blade that protects the knife. Do not try to remove it! After using the knife it is recommended to rinse the blade with water and dry it with a cloth. Washing up liquid is not necessary. Do not clean the knife in the dishwasher and do not leave the wood wet for a long time, otherwise the wood of the handle will warp. If you do use detergent to clean the blade, we recommend that you grease it afterwards with a little food fat or oil.
